Sweet Banana Almond Oatmeal

I originally saw this recipe somewhere on Reddit but I haven’t been able to find it again to give the original recipe maker their credit 😦 This oatmeal is super easy and yummy. I hadn’t thought about putting nutmeg on my oatmeal – which now seems really obvious to try – and I’m probably going to start putting it on every time I eat it forevermore. 

Ingredients:

Servings: 1 bowl

  • about ¾ to 1 cup rolled oats (or gluten-free oats)
  • 1¼ cups unsweetened unflavored plant-based milk (I use almond)
  • 1 banana, sliced into somewhat thin medallions
  • almond slices
  • agave nectar
  • cinnamon
  • nutmeg

Directions:

Over medium heat, pour the milk into a small pot. Wait for it to start boiling, then add the oats. Stir the oats occasionally until most of the milk has been absorbed.

Pour the oats into a bowl. Over the oats sprinkle the cinnamon (go nuts if you like a lot of cinnamon in your oatmeal), a couple shakes of nutmeg, a small palmful of almond slices, and add the sliced banana. Drizzle a small amount of agave nectar over everything – don’t add too much because it’s very sweet and can overpower everything else.
