I’m aware the header picture sucks. Needing to update it is a great excuse for me to make rice krispies again!
You can vary the ingredients quite a bit depending on how crunchy, dry, marshmallowy, or gooey you want your rice krispies. The version below is one I like, which is somewhat gooey but still holds a shape. The recipe comes from no one specific source; it’s a bit of a conglomerate of different recipes I’ve been trying out.
Ingredients
Servings: roughly 1 casserole dish or cake pan; use whatever you want for however thick/spread out you want the rice krispies
- about ¼ cup applesauce
- about 4 cups marshmallows (I use Dandies)
- about 5 cups chocolate rice krispie cereal (I use Koala Crisp, but you can use other types as long as they are whole-foods plant-based)
Directions
Line your pan with parchment paper, or use a silicone pan so you don’t have to mess with the paper!
Pour the cereal into a large mixing bowl.
In a large saucepan melt your marshmallows over Low heat. Stir somewhat frequently until it’s all melted. Add the applesauce and stir to combine.
Scoop out the marshmallow-applesauce mix onto the cereal. Mix everything together gently and thoroughly.
Scoop the rice krispie mix into your prepared pan. Press down gently. Allow the rice krispies to cool before cutting into squares. Or just start pulling apart bits with your fingers directly from the pan, because who wants to waste time cutting it into squares when the whole pan is for you anyway?
